Ingredients:
For the Crust-
- 3 cups all-purpose flour
- 1 tbsp granulated sugar
- ¾ tsp salt
- 1 cup unsalted butter, chilled
- ¼ cup ice water
For the Filling-
- 6 plums
- 4 tbsp flour
- 6 tbsp sugar, plus more for toppings
- ½ tsp cinnamon
- ½ lemon juiced
- 1 tbsp lemon zest
- 4 tbsp salted butter, cubed
Directions:
- For the crust- Whisk together flour, sugar and salt
- Cut the butter into small cubes and combine with flour mixture using your hands
- Once the mixture looks like coarse meal, add in the ice water
- Continue combining with your hands until the dough holds together when pressed. If the dough is still too dry, continue adding tablespoons of water until it holds
- Split the dough in half and shape into 6” disks
- Cover them both in plastic wrap and refrigerate for an hour
- Let them sit at room temperature for 5 minutes or until the dough doesn’t crack when rolling out
- Preheat the oven to 400°F
- For the filling- Cut the plums into ½” slices and put in a medium sized bowl
- Then add flour and cinnamon and fold until each of the slices are coated
- Add in the sugar and lemon juice then set aside for 15 minutes
- While the plums are marinating, roll out the dough into a until it is ½” thick
- Spread the plums in the middle of the dough, leaving 3” from the edges of the crust to then fold over towards the middle to hold in the filling
- Sprinkle around 1 tablespoon of sugar across the edges of the dough and fillings
- Then place the small cubes of butter throughout the filling
- An egg wash is also optional to make the crust flakier
- Bake for 50 minutes or until the center is bubbling and the crust is a light brown
- Let cool for a couple of minutes and enjoy!
