Fig and Olive Oil Cake

Fall Recipes

For one 8” cake 

Ingredients: 

  • 1 ½ cup all-purpose flour
  • ¼ tsp salt 
  • ¾ tsp baking powder 
  • ¼ tsp baking soda
  • 2 large eggs
  • ¾ cup granulated sugar 
  • ½ cup olive oil
  • ½ cup whole milk
  • 1 tbsp lemon juice
  • Zest of 1 lemon
  • ½ tsp vanilla extract 
  • 8 halved figs 

Directions:

  1. Preheat oven to 350ºF and grease an 8” cake pan
  2. In a small bowl mix together flour, salt, baking soda and baking powder and set aside
  3. In a large bowl whisk together sugar and eggs until light in color and fluffy
  4. Slowly pour the olive oil into the egg mixture while continuously whisking
  5. Next add in the milk, lemon juice, lemon zest and vanilla extract 
  6. Slowly add in the flour mixture and whisk until just combined 
  7. Pour the batter into the cake pan and bake for 15 minutes 
  8. After 15 minutes put the halved figs at the top of the batter facing up and bake the cake for another 30 minutes
  9. Dust with powdered sugar and enjoy!
