For one 8” cake
Ingredients:
- 1 ½ cup all-purpose flour
- ¼ tsp salt
- ¾ tsp baking powder
- ¼ tsp baking soda
- 2 large eggs
- ¾ cup granulated sugar
- ½ cup olive oil
- ½ cup whole milk
- 1 tbsp lemon juice
- Zest of 1 lemon
- ½ tsp vanilla extract
- 8 halved figs
Directions:
- Preheat oven to 350ºF and grease an 8” cake pan
- In a small bowl mix together flour, salt, baking soda and baking powder and set aside
- In a large bowl whisk together sugar and eggs until light in color and fluffy
- Slowly pour the olive oil into the egg mixture while continuously whisking
- Next add in the milk, lemon juice, lemon zest and vanilla extract
- Slowly add in the flour mixture and whisk until just combined
- Pour the batter into the cake pan and bake for 15 minutes
- After 15 minutes put the halved figs at the top of the batter facing up and bake the cake for another 30 minutes
- Dust with powdered sugar and enjoy!
