Pecan Snowball Cookies
Makes 15 cookies
Ingredients:
- 1 ⅓ cups all-purpose flour
- 1 cup chopped pecans
- ½ tsp salt
- ½ cup unsalted butter
- ¼ cup granulated sugar
- ¼ cup powdered sugar (plus more for dusting)
- ½ tsp vanilla extract
- ¼ tsp almond extract
Directions:
- Preheat the oven to 350ºF and line 2 baking trays with parchment paper
- In a large bowl whisk together softened butter and sugars until light in color and fluffy
- Add in the vanilla and almond extract and whisk until combined
- Slowly sift the flour into the butter mixture and mix in with the chopped pecans and salt
- Once the dough is complete, form 2 inch balls and place them on the baking sheets
- Bake the cookies for 12 minutes
- After taking the cookies out of the oven, place them directly into a medium bowl filled with powdered sugar and roll them around until fully coated
- Let the cookies fully cool until no longer warm to the touch and then roll them again in the powdered sugar
