Ingredients:
For Cookies-
- ¼ cup unsalted butter
- 6 ounces semi-sweet chocolate chips
- ½ cup granulated sugar
- ¼ cup brown sugar
- 2 eggs
- ¼ teaspoon vanilla extract
- ¼ teaspoon peppermint extract
- ¾ cup all-purpose flour
- ¼ cup unsweetened cocoa powder
- ½ teaspoon baking powder
For Topping-
- ¼ cup white chocolate chips
- ½ teaspoon coconut oil
- 2 crushed candy canes
Directions:
- Preheat the oven to 350ºF and line two baking trays with parchment paper
- In a heat safe bowl, melt the butter and semi-sweet chocolate chips together in the microwave
- Once fully melted, add in the sugars, eggs, vanilla extract and peppermint extract
- Then whisk in the flour, cocoa powder and baking powder until just fully combined
- Use an ice cream scoop to measure out the cookies, and place them on the baking tray 3 inches apart
- Bake the cookies for 15 minutes
- Let the cookies cool for a few minutes and then melt the white chocolate chips with the coconut oil in the microwave
- Using a piping bag or spoon, drizzle the white chocolate over the cookies and sprinkle the desired amount of crushed candy canes over
- Let the drizzle harden and then enjoy!
