Plum Galette

16 servings galette- 

Ingredients:

For the Crust-

  • 3 cups all-purpose flour
  • 1 tbsp granulated sugar
  • ¾  tsp salt
  • 1 cup unsalted butter, chilled
  • ¼ cup ice water

For the Filling-

  • 6 plums
  • 4 tbsp flour 
  • 6 tbsp sugar, plus more for toppings
  • ½ tsp cinnamon 
  • ½ lemon juiced
  • 1 tbsp lemon zest
  • 4 tbsp salted butter, cubed  

Directions: 

  1. For the crust- Whisk together flour, sugar and salt
  2. Cut the butter into small cubes and combine with flour mixture using your hands
  3. Once the mixture looks like coarse meal, add in the ice water
  4. Continue combining with your hands until the dough holds together when pressed. If the dough is still too dry, continue adding tablespoons of water until it holds
  5. Split the dough in half and shape into 6” disks 
  6. Cover them both in plastic wrap and refrigerate for an hour 
  7. Let them sit at room temperature for 5 minutes or until the dough doesn’t crack when rolling out
  8. Preheat the oven to 400°F
  9. For the filling- Cut the plums into ½” slices and put in a medium sized bowl
  10. Then add flour and cinnamon and fold until each of the slices are coated
  11. Add in the sugar and lemon juice then set aside for 15 minutes
  12. While the plums are marinating, roll out the dough into a until it is ½” thick  
  13. Spread the plums in the middle of the dough, leaving 3” from the edges of the crust to then fold over towards the middle to hold in the filling
  14. Sprinkle around 1 tablespoon of sugar across the edges of the dough and fillings
  15. Then place the small cubes of butter throughout the filling
  16. An egg wash is also optional to make the crust flakier 
  17. Bake for 50 minutes or until the center is bubbling and the crust is a light brown
  18. Let cool for a couple of minutes and enjoy!
