Spiced Ginger Cake with Maple Cream Cheese Frosting

Ingredients:

For Cake:

  • 1 ¼ cup all purpose flour
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • 2 tsp ground ginger 
  • 1 tsp cinnamon
  • ½ tsp allspice
  • ½ tsp nutmeg  
  • ⅓ cup granulated sugar 
  • ⅓ cup brown sugar 
  • 2 eggs
  • ½ cup avocado oil
  • ½ tsp vanilla extract 
  • ½ cup buttermilk

For Frosting:

  • 4 oz cream cheese
  • ¼ cup softened unsalted butter
  • 2 tbsp maple syrup 
  • ½ cup powdered sugar
  • ¾ tsp vanilla extract 
  • ½ tsp salt 

Optional: 1 inch nub of ginger for topping 

Directions:

  1. Preheat the oven to 350ºF and grease a 9” cake pan
  2. In a medium bowl whisk together the flour, baking powder, baking soda, salt and spices and set aside 
  3. In a large bowl whisk together the granulated sugar, brown sugar and eggs until light in color
  4. Add in the avocado oil, vanilla extract and buttermilk and mix until combined
  5. Next whisk in the flour, baking powder, baking soda, salt and spices and whisk until just combined 
  6. Pour the cake batter in the pan and bake for 25 minutes
  7. While the cake is baking, start by creaming together the cream cheese and butter in a large bowl
  8. Once light and fluffy, add the maple syrup, powdered sugar, vanilla extract and salt and whisk until the frosting is smooth and without lumps
  9. After taking the cake out of the oven, allow it to cool for at least 10 minutes before moving it onto a plate and spreading the frosting on it 
  10. Top with fresh ginger slices and enjoy!

*Can be stored in the fridge for up to 5 days
